I can certainly understand why the server asked, although it outwardly seems a bit tacky. I'm sure there has been more than one instance of someone wanting to tip US$5, not MX$5 and wrote "5", and vice versa. I always bring cash to that lounge, as the staff is usually lovely, and I want to insure that they're actually seeing the cash that I've left - typically MX$20 to $50, and occasionally more, depending on 1 or 2 people, whether it is just a glass of wine served, or multiple coffees and cooked to order egg dishes, or multiple glasses of wine, etc.
Since the hotel is already shady in how it converts MX$ to US$ for processing, the less charged to the room, the better.
