Just got back from my stays at both Aman Villas Nusa Dua and Amandari.
AVND stay was okay. Hardware was stunning, slight issue with mosquito net on the first night but they quickly fixed it. Service was good but nothing special, but food was the major let down. Most of the meaty dishes, i.e. Chicken, fish fillets, pork etc were overcooked at all meals. We tried to ask for off menu items and were simply told it wasn't possible. We were "upgraded" from 3bedroom to the 4 bedroom Villa #5 with the 50m pool which was nice, but we were told to pay $1,125++ per night if we wanted to use the 4th bedroom (coincidentally the master bedroom)

We still had a really good time and enjoyed the stay there, but it didn't really anything special at all. It could've been any other nice resort anywhere in the world instead of at an Aman. Would most likely not go back.
Amandari OTOH was amazing. Despite the view from the villa is not as impressive as the view from the bar/restaurant, and even though it rained the whole time (obviously not their fault), we still had a superb stay there. Food was really good and they had an interesting wine list. Service was warm, personable and attentive, everything had the magical touch as you'd expect at an Aman. The management team has done a great job and we would definitely come back to Amandari in a heartbeat.

It was a short trip for us, we spent 2 nights each at AVND and Amandari. We stayed at the 3 bedroom villa at Amandari, which is around 5-10mins walk away from the hotel main area or 2-10mins drive depending on traffic. I'd suggest emailing dari team for suggestions, they are very responsive and should be able to give you good advice!
For AVND, food was a big point for me as that's the whole point of staying in a huge private villa with personal chef. If the chef couldn't go off menu and can't cook decent food, then it means I would have to venture out, which defeats the whole purpose of staying there. But then again since each of the villa has its own private chef, I feel that YMMV when it comes to food at AVND. I have no idea what would be better in south Bali but Raffles Bali seems like a decent choice, at least on paper.
We are at the Indon / Bali AMANs annually for years , some might correct this to say 2 decades .. , and more recently at AVND too since Nusa closed .. We have always had decent chef ( s ) at AVND and off menu dishes too . Better check with Michel B what is going on ! Was fine last August and will be staying again , trying a different villa , in a few weeks !!
Besides AMANs , we have recently added stays at Soori as GM Astrid K is ex AMANs & understands AZ AMANs ethos
