Personally I like to take at least an hour over a meal.
In a fine dining establishment I'm likely to want to take 3 hours over it
We are definitely in the 'angels on the head of a pin' zone here.
If you want relaxed fine dining you need to be outside the airport.
If you want decent food on a timescale you can plan ahead and alert servers who will usually do their best to accomodate your wishes.
Who said anything about fine dining? If only..

I think as fast as appropriate for an airport lounge where people have flights to catch would be good, primarily delivering the next course without significant 20-30 minute wait times.

Even saying at the Chelsea lounge “I need to leave here in 60/70/75 minutes” recently doesn’t seem to make the blindest bit of difference.

My first thought was maybe 1 hour in the lounge wasn’t enough for a meal but it seems I’m not alone!
