Agreed re wines, too. It's been discussed before on this forum but yes, DL FAs often don't appreciate (or have time/energy for) serving different wines with different courses. Sometimes I'll let them know in advance that I'm going to want to switch from X to Y; sometimes I'll stop eating at the turning point in the food and just wait til they see that (they're often so eager to clear the trays that not eating can be a pretty fast way to get them to your seat); and sometimes I'll use the call button.
On my recent eastbound TATL with a late-ish scheduled departure (but on time), the FAs apparently decided to give everyone the dine and rest option. I did not check it when I preordered and I wasn't asked. However, I was asked whether I wanted the soup and it was poured at my seat. Purser said that no cheese had been loaded by catering.

Even if everything is served on one tray, I almost always want different wines with different courses. When the drinks cart first comes down the aisle, I ask the FA to show me the white and red "special selection" wines that aren't listed in the menu. Sometimes I also ask to see the bottle for a wine that is listed in the menu. I guess I'm high maintenance.

Does anyone know which are the 19 domestic airports where DL uses Gate Gourmet? Which DL airports have DO & CO? Does DL have contracts with any other caterers?
