Many end up resting on their laurels, over-expand the brand of Chef X outside the mothership, raise the price point to stoooooopid, and so on.
So on the Pujol visit (about 6 months ago), I'd sum it up with "Pujol didn't disappoint, but it did not excite."
I have a relatively extensive experience dining at Michelin two and three starred and San Pellegrino's
World's 50 Best restaurants.
While my meals at Pujol were very good, they were not in my top dozen or even twenty dining experiences over the years. The first time, I went with my wife to celebrate our anniversary. The second time, I took my daughter, a foodie who wanted to dine there, when we were in Mexico City. I doubt that I'll go again when I visit CDMX in the future, there are just too many other innovative restaurants there where I want to eat. That being said, I'd definitely recommend dining at Pujol if one has not previously eaten there; it's a very unique experience.
