To my mind, the biggest risk in the OP's scenario is that the first flight departs and lands on time, BUT is held on the tarmac at CLT for 10-20 mins waiting for a gate to open up - thus no time for advance planning. For that reason if I were the OP I would continue to try for an itinerary change with Iberia. While some people may be fine with such a short connection for reaons they have explained above, in my view no one should be forced to accept such a short connection (and the additional risk/stress) when they originally booked something that gave them ample cushion for delays. OP I'm sorry IB is being so uncooperative ...
