We’ve been quoted a price of £1,860pp from the travel agent to upgrade on way business class.
From what I’ve read, I’ve seen some people get an upgrade “offer” on the app 2 weeks or so before departure, so I’m just trying to see what peoples experiences have been in trying to upgrade and where they found the best prices (if there was any difference at all)..basically trying to weigh up the options and see if it’s worth waiting (although appreciate that business seats can be booked up before!)

A one-way upgrade will make the return journey in economy feel miserable: maybe not the best way to return to reality after a magical honeymoon.
I've clearly no idea of your personal circumstances, but the £2k upgrade cost would be healthy whack for most newly-weds.
I'd suggest spending time ironing out any other creases that could impact your big day and the honeymoon, rather than worrying about flight upgrades. Blow some of the £££ saved on reserving seats and booking lounge access. On the day shake confetti out of your hair at the check-in desk and ask if there's a chance of getting a window row with a blocked third seat.
