Also, in the previous situation Hyatt wouldn’t even refund my Suite Award or issue compensation despite receiving no suite. So given that experience I am definitely not inclined to trust they’d fix anything after the fact.
I assume you will tell the hotel you didn't book the suite at $500 and they will check the booking history?

Your second issue is separate. I assume it's a points booking as cash bookings are updated immediately to a suite.
