Alternatively, should I use the underground tunnel system? I can't seem to find much information on the layout and navigation of those tunnels online; if anyone can describe how to use it, I'd appreciate it!
The checked bag is the sticking point. T2 and T3 are next to each other. Airside it is a relatively easy walk. But you need to go outside security and downstairs to baggage claim.

Grabbing a bag from T2 and going to T3 is also relatively simple:
  1. Follow the signs to baggage claim downstairs, grab your bag in Terminal 2 and head to Terminal 3 departures. (Upstairs, next terminal over. Easy walk.)
  2. Check in with AA, drop your bag and follow the signs to security. No trains needed.
  3. After security, head left or right depending on your gate. (AA has L K H G concourses) All concourses are an easy walk from security.

Here are some useful maps.
