I would definitely recommend Le Manoir de Rochevilaine.
It's absolutely wonderful, definitely in for a great view. Service is really good and food is excellent. When it comes to hotels, please remember that Brittany is very authentic but also one of France's poorest regions, historically as well. For that reason, you won't find the level of Luxury you'd find on the Riviera or in Ireland. I'm making a comparison with Ireland as some of the landscapes are pretty similar and the dialects/languages have common roots.

Don't go to expect splurging into luxury but having very authentic experiences, discovering beautiful and still relatively unspoiled sights and nature with extraordinary food.

I'm from Brittany myself and go back everywhere as we have a family house there. I can also recommend the following restaurants more than highly:
- Rosmadec
- Les Trois Rochers
- Les Glazicks
