2. The other quickest options are through YYZ or YUL late afternoon/early evening, both connections about two hours. I assume these are fairly safe in and of themselves, but an wondering whether those times of day we'd be more likely to encounter delays out of Quebec, compared to the early morning flight.

Thanks for any advice!
If the irline sells you a connection, then it's their problem. I don't understand this business of "safe connection." Especially if in business class. What I do is to look at what options there are in case I miss my connection. Having probably bought the shorter connection. (If flying on an upgrade I might be a bit more careful.)
Now that AC has cancelled my favorite flight, I often find ourselves having to connect on the East side. Both YUL and YYZ have pros and cons. More options at YYZ if there is an issue, smaller (hence more comfortable) airport at YUL. So my choic eoften boils down to price, and whether the domestic YYC-YYZ/YUL has signature class. (Mind you, latter is not terrible reliable if booking well in advance. My flight next week was a 787 wyhen I booked. Switched to a 321 last week. Switched to a 788 this morning. So switching from A seat to a B seat. Then back...)
