When I first started flying AS they had 2 options or the fruit & cheese plate, and one was usually something healthy. It was fantastic. I would happily forego two options to go back to higher quality. I will admit I am an obviously picky eater, but I used to always have an option. Chicken covered in sugar has never appealed to me, and I know better than to get my hopes up for airline pasta.
My favorite meals in recent memory have been the redeye salads (the beet salad with chicken, and the vegan banh mi salad). Sadly those are gone for now from first class, and once confirmed in first you can't pre-order food for purchase from the back.

I have to go back way before the fruit and cheese were ever an option to recall a time when the meals were better looking and tasting then they are currently. Back when the meals were plated by the Flight Attendants onto the Gold Coast dishware. Healthy is a bit subjective I guess, but these meals are even a lot healthier then anything served in recent times. Five choices.... one is vegan and has a protein component, albeit not animal protein.
