Normally the meal would be served about 2 hours after boarding the flight. I would like to eat 5 hours later after some sleep, is it possible as mine is business class ticket?
If yes, should I inform them prior to boarding the flight, or after I board the flight?

You'd notify them after boarding, either as part of the meal order process or before takeoff.
On one flight, they didn't take my order on the ground but they began heating meals just prior to takeoff so it was too late to ask to have my meal held.
