If they need wheelchair assistance, please book wheelchair assistance. But if they don't physically need it, don't book it and take away the service from someone that needs it. Only you know their physical capabilities. I'm not as familiar with wheelchair assistance at SLC, but at other airports, the wheelchair assistance requires extra time for almost every step of the immigration and connection process. I recommend following ATOBTTR 's advice and looking up alternatives.
