If you were silly enough to to check your bags thru to CAN and then try to "miss" your flight in HKG then I imagine that the conclusion would be:
- Cathay just puts you on the next flight for free or for a fee [gonna be hard for you to avoid this if you pretend you just went to sleep in the lounge or accidentally missed the flight]
- If you try and get your bags back in HKG, they may start to talk about repricing your ticket. At the best case you may end up in some multi-hour hunt for your bag and specialist intervention
- If you say that you deliberately don't want to take the HKG-CAN leg, most agents would be incentivized to reprice your ticket (or tell ticketing to do that later)
So, the general rule for skip lagging (i.e. not taking the second leg of a flight) is that it doesn't work if you have checked baggage. So you need to just fly to CAN and then get back to HKG via public transport (not that bad with the new high speed rail). Also make sure that you have the visa permission to enter China the second time, otherwise you'd be denied boarding for the flight before you even get to HKG.
So then you are really committing yourself to a longer return home, but at the same time you get the money saving, you get the extra status points/Asia miles, and a chance to enjoy the lounge in Hong Kong too. This is your only real option with luggage if the flights are already booked, or pay a change fee to have a 3-4 day stopover (The cheap fares often have a 168 hour maximum stopover period, but also a change fee).

I know it and dont want to bring troubles to others. Thus I am asking when should I notify the ground staff that I wont take the connection flight. However, based on your information, I am leaning towards booking a different airline
