I have never been to Gouldings, but I have very recently been to Bluff. We stayed two nights at the Bluff Dwellings resort. You mentioned wanting to do river rafting. Bluff Dwellings can hook you up onsite with that if you want, and other stuff.

I think odds are good of you being okay with no reservations in St. George and Las Vegas. But Kanab is a much smaller place. Also, what I said about St. George applies only to the hotels that are in downtown St. George. If you want something close to Zion, then I am certain that advanced reservations will be essential during the high season.
