I think I have a hypothesis for why.

Let's assume you have one cup of coffee. It's sitting on your tray. You suddenly hit turbulence. You instinctively grab your coffee cup to make sure it doesn't tip over or spill.

Let's now try this with two cups. Sure, maybe you'll have two hands free to grab both.

But with three cups? Good luck!
