I know nothing of whisky or distilleries, but the 2 airports are only 40-50 miles apart, so you’ll be fine whichever one you land in. Choose whichever is cheapest or most convenient time-wise.

If you're planning to have a night in the city before travelling onwards though, Edinburgh hotels are now prohibitively expensive.
For that reason, I would recommend flying OUT of Glasgow over Edinburgh.
