Turning all the lights on for breakfast three hours before arrival would annoy the heck out of me. 1.5-2 hours is more than sufficient. I'll also give credit to AA and UA where most crews don't turn the lights up all the way for breakfast, especially on overnight flights when some are trying to truly maximize sleep (and/or maybe they know that their breakfasts are not worth waking up for).
