Definitely good progress on the date change.
Your other scenario involves the change fee in either case, switching from a transit to a stopover or changing MIA to JFK. What they are saying about fare difference is standard, but with this fare it is supposed to use the original fare basis if you've flown the first segment. There may be small differences in taxes though and those are payable in addition to the $125. Just tell them to price it and see what they come back with if you're sure that's what you want.
To check availability you can use ExpertFlyer. You need D class (assuming this is business class). If you're looking at a transit flight then you have to have married segment availability, meaning it has to be available in D for the entire journey A-B-C, not A-B and B-C separately.
