What does United do if I check my bags in and then need to rebook my flight until the next day. Do they take them off the plane, or if gets the destination, do they hold it right away or does will it go on the baggage carousel and only if they see no one took it will they put it away from (I don't want it get stolen).

International flights, they'd pull the bag. Domestic flights, the most likely scenario is that it would sit on the baggage carousel until someone noticed it, and then it would be put in the baggage office.
