Welcome to flyertalk.

The check in deadline for Korean at Hong kong may close 1 hour prior to departure so you may only have 45 mins to collect bags which is too tight IMHO ( a minor delay would cause you to miss it )
I would check with Garuda to see if they can tag your bag to korean airlines ( both sky team member airlines ) on separate tickets

On separate tickets with checked bags to collect, a 2 hour layover is too tight for comfort imho.
