All AAdvantage flight awards are fully refundable if cancelled prior to scheduled departure time.
Were the IB Economy flights you found also available with BA Avios? Redemptions with BA Avios are refundable changeable for a fee ($50 USD/ticket?); and I believe that IB Avios redemptions
on IB metal are also refundable/changeable for a fee.
Iberia's website indicates that all of its long-haul Economy Class seats have only 30-32" of pitch. For a more comfortable seat on Iberia long-hauls, you'd have to book Premium Economy.
