Different people have different preferences really.
Taxes will be different if you book two one ways or a return.
two one ways has some advantages in terms of flexibility, but conversely, if you need to change/cancel you’d pay the fee twice, and if there is a schedule change on one direction which gives you flexibility it won’t be extended to the other one way booking.
