The vast majority of ryokans with such vibes are more traditional in architecture and interior appearance. Onyado Chikurintei, Onyado Kawasemi, Takinoya and Atamiso are among those that have great forest/garden views that don't fit the modern description. Beniya Mukayu is Japanese-modern and is surrounded by a forest, although not quite as magical as the others (there is a massive, historic and gorgeous tree there, however, that they light up at night.) Yoyokaku, Ryotei Hanzuiryo and Nishimuraya Honkan are not surrounded by natural forests - the first floor rooms are right in front of a well maintained garden with pretty trees. Hakone Ginyu, Hotel Iyaonsen, Fujiiso and Arcana Izu have great views, but the forest is not directly outside the room - it's across a valley; they are all stunning during the Fall foliage season. Hakone Ginyu has most modern of the three. Asaba is traditional but is very well maintained, like most other top-flight luxury ryokans - the Hagi suite is exceptionally serene and you even get a babbling brook right outside the veranda. The views from Gosho Gekkoju are stunning, and while the property does have pretty trees throughout, it's more about the views there.
The Fufu properties tend to be the most modern, partly because most of them are comparatively new properties (the oldest being 2019.) But, while the Nikko Fufu is incredible, I wouldn't say the forest vibe compares to most of the aforementioned ryokans.
Takefue is not for everyone. For those really looking for a more modern room design and layout, it might not fit the bill.
P.S. - forgot to answer your question about bookings. It's highly variable, and depends on the time of year. Looking at the current calendar, it looks like at least one room is available for most of June. If you're not picky about your room choice and are somewhat flexible on dates, I think you'll be able to snag a room. November through March is tougher, since people prefer to do Onsens during the colder months. And November/December is fall foliage season as well.
