Thanksgiving Day should be quiet. With Polaris, Global Entry, and no checked bags, the international to domestic transfer at EWR should be relatively fast, definitely less than 95 minutes. There will be later flights to IAH if needed. And I wouldn't want to hang around for 2+ hours in a lounge (at IAD) before catching my domestic connection. In this case, I would take the EWR connection.
