I have two ICN transit visits this summer. On the first, I’m arriving with my teenage daughter at 17:25 and departing next day at 9am. Your two hotel picks for your first transit are both reasonable, especially if you're looking for convenient locations and free/cheap shuttles. In case you want to get some beach time, you might look into "Week& Resort", which may be a tiny tad bit more expensive and requires a cheap taxi ride. Make sure to include the ampersand in your searches (e.g. Tripadvisor); I've stayed there twice and it's a nice place.
CIMER is only open until 9pm.
