Concur. Molasses and turtles can move faster than AM check in, even the fancy Premier line. Security isn't your choke point, the bag drop is. I've spent way too much time in MEX lounges, paranoid of traffic and check-in issues. I don't think it has ever taken me more than 15 minutes at a security checkpoint.
You've been lucky. I've been held up at security numerous times. Will be going through this coming week. But the bag drop could be super slow. Going through security is a breeze if they aren't overzealous.
