The problem with these wishes is that Aegean would need to introduce a whole new type into the fleet. That is a very costly operation, which requires training of pilots and mechanics, and stocking up on various spare parts. In addition, if a plane goes tech, you need some type of available spare capacity. Just look at all the problems that Lufthansa has right now with their five A380s. Whenever one of those planes go tech, they switch to an A350 or A346.

In order to create a profitable long-haul operation using a brand new type (e.g. A359 or B789), you probably need at least ten airplanes in your fleet. And that would mean adding at least seven or eight daily long-haul departures out of ATH. A single route to NYC isn't sufficient. Which six other destinations could they add daily flights to?

Adding the A321LR is a much smaller risk. In the worst case scenario, if the proposed routes don't work out at all, they could always use that plane for LHR, CDG, AMS, FRA, etc.
