I am at a loss for the best central hotel location that is in the middle of things and easy walk/metro to see more of the city. Last time we stayed at the Marriott Champs-Elysee, which we thought was a good location for what we ended up doing. What about Montmartre? or should we stay in the Champs-Elysee area again?
Another area you might consider is Le Marais. This district is centrally located. It's also home to beautiful plazas like Place des Vosges, Musee Picasso and is rich in Jewish culture..
.It's also relatively flat compared to Montmartre, making walking easier. It can be lively at night, which might be a downside if you prefer quieter evenings.
