I'm also looking at an itinerary that involves 10 hrs layover in Seoul.

Next flight: 16:30

Though not extensive, I been to Seoul twice, so I'm okay with or without skipping some of the more 'touristy' stuff. And it looks like not much will be open before 11am anyways.

After dropping off luggage at ICN's storage locker, and taking the train to the city, I assume I would be in town around 8am?
Gwangjang Market for breakfast as suggested above would be a great option.
Maybe leaving the city by ~1pm latest and head back to the airport. That gives me around 5 hours in the city.

Would Bukchon Hanok village be too time consuming?
I did stay in the Myeongdong area during my last visit, so I'm somewhat familar with those surrounding streets.
Any particular area that has a more cluster of cafes to choose from?

Didn't get the chance to visit the Gangnam District last time. Worth visiting? From what I'm reading, it's mostly more upscale + international brands that you can find pretty much anywhere.
