How about the Left Bank for something different? There are nice neighborhoods in the 6th and 7th with hotels that are within walking distance of museums, churches, gardens, etc.

Will you be using public transportation to/from the airport? If so, it might make sense to pick a hotel that's within easy walking distance of an airport bus stop or RER station (ideally on the line from CDG, so that you don't need to transfer). With luggage, I'd try to avoid the stairs that are usually associated with the Metro.
We will also be staying two nights and don't want to haul luggage so thought that hotel near Gare de l'est or du Nord might be good idea. It seems that the 350 bus may no longer be leaving from there though. What hotel between the gares is reasonably clean and has an elevator?
