The other question is that I see is I see NAN-MEL flights a few days later available at saver levels, but I'm not seeing anything available SFO-NAN. Is there any chance of changing just the NAN-MEL leg or do I have to cancel and rebook (which wouldn't work since there's currently no SFO-NAN flights available with miles during that time period)?
I'm pretty sure you will have to book a new award ticket for NAN-MEL on the later date. If SFO-NAN award seats do not appear before the trip starts, you would need to drop the NAN-MEL segment of the original tickets. If award seats appear, you can cancel and redeposit the new NAN-MEL tickets.
This costs extra miles but it works. FWIW the Yasawa Islands are quite nice and not expensive.
