It may be that Hawaiians are more easygoing. It also may be that most people on your flights, locals or not, were on vacation and thus more easygoing. I am guilty of having a generally different mindset when traveling for leisure versus work, especially nowadays, when the "thrill is gone" as all flying is less pleasant and status isn't what it used to be. Plus on vacation there's a good chance I've had a drink or two beforehand.
It used to be that most people on LCC and especially ULCC were on vacation, but these days I don't know.
