Entering the lounge automatically checks you in for a flight so once you're in the lounge you'll lose the ability to change flights from the app. Staff would need to offload you off the flight and then change the flight for you.
Not something I've personally tried and I'm sure you'd get evil stares if you tried it!
I have changed domestic flights while in the lounge before on the app. But with carryon only.
Often wait until at the airport to change as have been stuck in AKL traffic for far too long before.
