I frown upon abusive ticket practices as well, and have never ever tried to bend the rules
But the round trip tickets are $1,600 and the one way are $1,400 and I was debating spending the extra $200 per person (4 people) if it meant I would retain the credit. That said, if I can only use it for a one way flight back to Europe it isn't worth the $800.

You will retain future flight credit, but it can essentially only be used for a one-way flight back to Europe. (Whatever itinerary you attempt to change to will be priced in conjunction with what you already flew).
Also, note that itineraries originating in Europe may include a change fee, which would be levied upon attempting to use the credit.
How would they control where you use the credit for?
