If you're that worried, add an extra day of buffer in Chicago and Houston and stay the night. It seems incredibly unlikely that any disruption would last for multiple days unless a tornado hit the airport directly, which seems unlikely. Worse comes to worse, if you can drive, you could likely rent a car and drive to Chicago.
