I don't come to this thread much, but had to post with a recommendation that if you ever get a chance, check out Cabane a Sucre Pied de Cochon -- Martin Picard's seasonal (February to May) sugar shack restaurant about an hour outside of Montreal. We've gone for two consecutive years, and not only is it a fantastic meal, it's possibly the best value for a 5-star "tasting" menu in all of North America. The per person price was about US$105, including tax and gratuity, and we spent about US$140 per couple on drinks. Reservations open on Dec. 1 and sell out immediately. (Also, I say "tasting" because we went home with about 15lb of leftovers and that didn't include any of the dessert leftovers because we ran out of containers and the restaurant did, too. (Last year they brought us a pile of takeout containers and big shopping bags after the first course.)


Chicken liver, candied hazelnuts, maple syrup on a choux pastry


Split pea soup with mushrooms, pork belly and foie gras


Rabbit with a cherry reduction (and maybe pork belly in the center)


Bitter greens salad with anchovy dressing and fried pork skin


Omelet stuffed with potatoes and pork sausage topped with cheese


Maple glazed peking duck with traditional accompaniments (not pictured), plus maple sugar


Cassoulet with pork shank, sausage and other goodness


Fish with stuff that doesn't include pork!!


Tourtiere (meat pie) with foie gras, duck hearts, liver, ground meat and probably some pork for good measure. Topped with brie, because why not?


Maple flan wrapped in pastry, topped with maple syrup


I can't even remember the exact combo, but it was a creamy gelatin (maybe maple, because...it's a sugar shack) over rhubarb, wrapped in maple candy, topped with maple candy, and with a delicious apple cider and rhubarb garnish

There were eight of us, and with the exception of the duck, the soup and the pair of flan, which were for the entire table, everything pictured here was for four people and the other end of the table got an served the same.
