TLDR, Grand Hyatt is great for business while Hyatt Regency is fantastic for tourism. If you are doing both, choose Hyatt Regency.

Grand Hyatt is newer, better architecturally and was built to be a Park Hyatt. Globalist suite upgrade can be stingy at times and the location is poor for tourism.

Hyatt Regency Xi'an is among the best HRs in China. It is at a great location for sightseeing, has fantastic breakfast offerings (lounge is closed for breakfast), and is very generous with suite upgrades. Downside is that I find the Happy Hour offerings to be somewhat lacking in the Regency Club (but still better than what's on offer at Grand Hyatt's Grand Club). Also the property is huge and I'm sure I walked 800-1000 steps from my room to get to the Regency Club one way.

There is also a Centric near GH that opened recently. I've heard good reviews but haven't been.
