We were looking for a place last fall for a quick one or two night stay and we ended up staying a night at Troutbeck. Service and dinner in the restaurant were very good but the room was not what I would consider luxury. We would return again without hesitation.
We had actually booked Piaule Catskills originally but cancelled for a couple of reasons. Be careful if you are staying mid-week as there are certain times of the year the restaurant is closed! I only found this out AFTER we had booked and called the hotel to inquire if it was indeed the case since I found a mention of it buried on a page of the website. During the time we had booked, the restaurant was closed not only for dinner but also breakfast. Clearly this is a problem as they are remotely located so anyone considering booking there should check 100% on the status. (As an aside, there was also a place that had cabins like Piaule that we considered on the Hudson and it had a closed restaurant on some weeknights....sorry but can't remember the name right off the top of my head.)
Another place to consider that hasn't been mentioned is Glenmere Mansion which looked really nice but was sold out on the night we needed.
