I agree with you 100%. I think AA is true pre-order and I know DL is true pre-order.
I can't believe UA is saving that much $$ by only allocating so many of each dish on a flight rather than implementing a true pre-order system. A significant portion of the catering cost is the labor, which is going to occur anyway.
