We are American citizens, arriving into IST on a BA flight arriving around 7pm. We have separate tickets the next morning on a separate itinerary flying Aegean Air to ATH. We don't plan on going to see anything as we will be there again for a cruise we are catching out of Athens.

If everything is on one ticket, your bags will go straight to your final destination, no need to pick them up. You don't need to go through immigration, necessarily. The airport operates 24/7 with flights at all hours of day/night.
We are on separate tickets. We'll need to go landside upon arrival in IST to get our bags, as our Aegean flight the next morning is on a separate itinerary.

Uber uses regular yellow taxis in Turkey. The only advantage is being able to use a credit card. Using it from the airport is a bit of a pain, using it to the airport is fine.
Wife wants to stay at a hotel with Airport Shuttle service. Thinking the Hampton outside the airport. Curious how we can contact the Hotel shuttle upon arrival (if we don't have phone service there). Any ideas?

The Hampton is advertising as having an airport shuttle. Again, not sure how to contact the airport upon arrival to request pickup.
