Today for lunch I tried a version of the mortadella sandwich that Chef Anthony Bourdain created. I did not use a kaiser roll but a couple of slices of sourdough.
Simply put a heap (4oz) of mortadella in a nonstick pan, did not use any oil/butter. Waited until some nice caramelization occured, flipped the pile and put a couple of slices of provolone on top of the pile.
Others suggest browning the bun/bread in the same pan with oil/butter but I simply toasted in an attempt to make this a slightly more healthy sandwich.
On one side of the toasted bread I put some strong brown mustard and on the other piece of bread some Duke's mayo.
Once other side of meat was caramelized I placed the pile of meat & melted cheese on to the bread and ate.
AMAZING, wowza !!!!! I won't make this one frequently as it is very rich but what a terrific sandwich !!!
