Yeah, I think that if a chunk had actually broken off, it would have only looked like a bad hair cut (gapped) or something.

But only a little actually broke off, the rest was...well, *broken.* It looked like there was a wave or a ripple in it at a weird angle. He pulled one of the strands and it just popped off at the break. I can't adequately describe it, it just looked strange.

My guess is when the ice coating the hair cracked, it partially cut some of the hair. I don't think hair itself can actually freeze. Whatever the physics were, it did look strange.
