Do not actually send the e-mails, but upload and (in an emergency) download those attachments on secure computers such as at embassies.
If you're able to access your draft folder remotely in order to send the email, then you can access the actually sent/received version. Which is to say so could anyone gaining access to your email account.
Alternatives (all of which run some security risk) - save scans on your phone, in iCloud, or Google Drive/Dropbox etc.
