I understand exit seats are sought after, but in each case there were plenty of other middle seats free and the passengers taking the middle seats were either non-status or Gold. (I saw the boarding passes). I refuse to pay the currently exorbitant CE fares on this route for the free middle seat which is the single benefit I get for the extra fare considering I get the rest with status and the meal is mostly inedible anyway.

Are ground staff willingly overriding TS or does this not apply to the Euroflyer brand ?
yes TS applies to Euroflyer routes from Gatwick

No, staff are not "willing overriding TS", TS will have decided the middle on the exit row are the best available at some point and will unblock them in preference to other middle seats.

There are reports earlier in the thread that TS may be looking at people trying to game the system, taking window and aisle and leaving the middle empty rather than choosing seats together and leaving the window or aisle empty.
