Does this ring true? And if so, exactly how does it work? By Hilton corporate policy, does the daily credit go by calendar day, by night (say noon to noon), or how? The front desk couldn't explain it too well.

The
luxury US properties where I used this benefit were very flexible in how the timing of this worked. The ones deserving of being called luxury have a “no worries, we will make everything right” attitude. Just make sure to check the bill at checkout time so anything that didn’t happen automatically gets fixed.
One example, I arrived super early (like 9 am), and was able to have breakfast in the hotel’s restaurant and apply it to my folio, even though they haven’t even been able to check me in yet, since the room was not ready. The $50 credit was applied automatically to that meal.
Another time I had a 2 night stay booked as two consecutive nights from 2 different accounts. Because they checked us out and back in before we even had breakfast the first morning, charges for both days’ breakfasts appeared on the second bill. When I brought that up at checkout, they fixed it with no hassle.
It would be super disappointing if a “luxury” property gave you trouble with splitting the credits in any particular way, as long as your F&B purchases fit at least some definition of being split into days.
