I would add to your list the St Regis on Saadiyat Island. Excellent service and the best beach the UAE has to offer.

Personally never use full board but I know the hotel offers at least half board. Great kids club as well. Not busy as well outside peak seasons (we often have one of the pools for us during week days).

They do not offer an evening program, but I never came across an evening programme like you would see at a package hotel in Mallorca in the UAE.

Other beaches, which are not on Saadiyat, are often not really nice. The one at Saadiyat is as clear as on the Maledives if there's no wind.

I don't see an issue re/ your wife's visa, you are entering and departing the UAE.
