The captain seemed to think that there was some dual mode capability on the aircraft setup for some but perhaps not all of the type. I think it is irritating for the augmented flight crew as well on their breaks.

Nope, your plane, N401DZ (DL's very first A339 incidentally) does not have viasat, it only has old wifi.

Old wifi requires payment and is pretty slow/patchy as you noticed, but it more or less works around the world.
New wifi is free, and fast/reliable, but it's not available over the Pacific until next year.
