So I had the salmon dish on CUN-CDG and was pleasantly surprised. The salnon was not dry as I had feared. The seasoning was on point.
My only minor gripe is with the separate sauce. Some kind of curry sauce that looked like it didn't belong on the dish, which tasted just fine without it. In fact I'm not yet convinced that it wasn't served by mistake.
On the wine side the Telmont was decent but not particularly memorable, and same about the 2018 Margaux.
